My bread, is prepared exclusively with selected yeast and organic flour milled stone. However, the main element is the time. A long rising and ripening at a low temperature ensures a product with high organoleptic and nutritional characteristics. This will rediscovered the authentic flavor of the bread, which we have forgotten.
We are used to industrial bread, perfect in form and geometry, but alas tasteless.
Almost all bakeries, for reasons of time, using semi-finished products and yeasts ready to get an immediate and continuous production. Very often in mixtures they are inserted whitening, anti-mold and various additives, and it is impossible to trace the supply chain.
I started to dedicate myself to this project to ensure my children the goodness of a food that adore, with the hope of preventing allergies or illnesses caused excessive refining and flour corrections.
With enthusiasm, patience and dedication, I then began a careful study on the traditional methods of baking and raw materials, and attended courses and workshops.
The result is a genuine product, such as bread than once, made with love.
It produces also on request croissants, Panettone and Colombe.
