Obtained from olives of the cultivar "Peranzana", picked by hand when still green, from the Agro groves of Torremaggiore (FG), registered as PDO Dauno Alto Tavoliere. Packaged in cans. BIO.
Description
It comes from a little factory working between the olive groves in Calabria, along the Ionic cost; the firm belongs to our friend Mario Brogna with whom we have been collaborating for 25 years.
The olives are grown and worked strictly following the organic standards and under an in-house quality control system able to monitor each production step, from the beginning to the end. The washing and peeling processes are done by innovative equipments able to maintain whole the olives along the many passages thanks to air fluxes. After being so cleaned and made free from residues the olives are then crushed and put in steel-basins. The olive paste thus obtained is then pumped to a horizontal decanter where it is cold-extracted and separated in three phases: water, olive residues (pomace) and the extra-virgin olive oil that we now offer you, pure, in bottle of 75cl.

The Archidamo EVO oil, obtained cold, is a medium fruity extra virgin obtained from the traditional Salento blend with a higher percentage of coratina which gives it a strong character, with spicy and sometimes bitter scents. Clear sensations of strawberry and red fruits, red radicchio, chicory and lettuce, sweet notes.

Organic pitted oil obtained only from olives of company origin in its own mill with continuous line and pitting. This blended of Gentile, Intosso, Crognalegno, typical varieties of the area, is characterized by having herbaceous hints accompanied by almond notes. The taste shows the grass on and fresh walnut, the beautiful texture highlights fresh bitter notes that alternate with pleasant slightly spicy sensations. Cold extract.
