Friesian breed, brown and mestizo, for years, we are practicing a selection to improve the content of k bb casein in milk and then enhance the properties of the final product. The heads are fed with traditional method, ie separating the hay feed, and treated with homeopathic remedies. In the barn, free stall, the animals each have 9 square meters of space all to himself; also they benefit, during the year, a period in "freedom" to pasture.

In 2003 we obtained the certification of milk produced by organic farming. We feed our cows exclusively with hay from our fields containing herbal essences with unknown and unavailable elsewhere, giving the milk and therefore the cheese a unique aroma. We integrate the feeding with mixtures of certified organic grains and certified GMO Free. The milk produced is delivered to the dairy where it follows a machining path apart and is transformed into Parmigiano - Reggiano from organic farming.
