The Farm Iris is located in Rivalta di Lesignano de 'Bagni , in the heart of the Apennines of Parma and in the area of the Matilde Hills, where nature and time have maintained a central role: the same that they had a hundred years ago, when the Parmigiano-Reggiano is still cooked with bundles of wood. Today it is used steam to cook it, but milk and Parmesan Iris have preserved intact the organoleptic characteristics of the products of that era.
Ours is a history of innovation in tradition , full of passion and work in harmony with nature. These are the reasons that led us to switch to organic production : In order to obtain a genuine cheese and rich in flavors, just like what it once was.
Iris is engaged in production and maturation of Parmigiano-Reggiano made exclusively from the milk of its own organic farm. Through our shop we also carry the direct sale of Parmigiano-Reggiano cheese and other products from us.
