The Company
I Giusti & Zanza Vineyards after the renovation of an old cellar that, in Fauglia Hills, produced wine from the early nineteenth century. Geographical location: The territory is part of the Tuscan coast, about 30 km north of Bolgheri to 100 meters above sea level, where it reflects the beneficial influence of the sea. The landscape is characterized by rolling hills and alluvial light soil composed mainly of sand, gravel and silt with limited presence of clay, easy to work with and very draining. The Mediterranean climate, with mild winters and temperate summers by the sea breeze, combined with the intense brightness of the places, ensures ideal conditions for viticulture. The Vineyards: The company currently conducts 17 hectares of vineyard dedicated mainly to the cultivation of red grapes. The planting density of the vineyards varies, depending on the varieties grown, from 9000 to 10500 plants per hectare, the age of the vines ranges from 10 years of the new plants to 40 years old. Grape production comes to a maximum of 80 quintals per hectare with yields to very low strain that guarantee perfectly ripe grapes. Conducting farm is organic and in the vineyard is only made use of natural practices using organic and biodynamic preparations. The varieties of grapes are grown mainly Sangiovese, Syrah, Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Alicante; also they cultivate small amounts of white grapes like Semillon and Trebbiano Toscano. The Harvest: The old vineyards as well as new plants are harvested by hand only to realize directly in the vineyard a first selection of the grapes. The Fermentation: takes place in the traditional way, using natural extraction capacity of musts, with gentle movements of the marc and long maceration of up to 18/24 days, depending on the variety and ripeness of the grapes. Aging: The wine is conducted in barrels of 300lt French oak medium toasted, and varies depending on the grape variety and vintage. The wines are bottled after a light filtration without any kind of stabilization, so any sediment on the bottom of the bottle are witnesses to the naturalness of the product.

| I Giusti & Zanza Vigneti nasce dalla ristrutturazione di una vecchia Cantina che, nelle Colline di Fauglia, produceva vino dagli inizi del XIX secolo. Posizione Geografica: Il territorio fa parte della Toscana della Costa, circa 30 km a nord di Bolgheri a 100 metri di altitudine, dove si risente del benefico influsso del mare. Il paesaggio è caratterizzato da dolci colline di origine alluvionale e da terreni leggeri composti principalmente da sabbie, ghiaie e limi con limitata presenza di argilla, facili da lavorare e particolarmente drenanti. Il clima Mediterraneo, con inverni miti ed estati temperate dalla brezza di mare, unito all’intensa luminosità dei luoghi, assicura condizioni ideali per la viticoltura. I Vigneti : Attualmente l’Azienda conduce 17 ettari di vigneto dedicato principalmente alla coltivazione di uve a bacca rossa. La densità di piantagione dei vigneti varia , a seconda delle varietà coltivate, dai 9000 ai 10500 ceppi per ettaro, l’età delle viti va dai 10 anni dei nuovi impianti ai 40 anni dei vecchi. La produzione di uva arriva ad un massimo di 80 qli per ettaro con rese per ceppo molto basse che garantiscono uve perfettamente mature. La Conduzione Agricola è di tipo organico e in vigna viene unicamente fatto uso di pratiche naturali usando preparati biologici e biodinamici. Le varietà delle uve coltivate sono principalmente il Sangiovese, la Syrah, il Cabernet Sauvignon, il Cabernet Franc, il Merlot, il Petit Verdot e l’Alicante; si coltivano anche piccole quantità di uve bianche come il Semillon ed il Trebbiano Toscano. La Vendemmia: I vecchi vigneti così come i nuovi impianti vengono vendemmiati unicamente a mano in modo da realizzare direttamente in vigna una prima selezione delle uve. La Vinificazione: avviene in maniera tradizionale, sfruttando la naturale capacità estrattiva dei mosti, con dolci movimentazioni della vinaccia e lunghe macerazioni che arrivano fino a 18/24 giorni, a seconda della varietà e della maturazione delle uve. L’affinamento: dei vini è condotto in tonneaux da 300lt di rovere francese a tostatura media, e varia a seconda del vitigno e dell’annata. I vini vengono imbottigliati dopo una leggera filtrazione senza alcun tipo di stabilizzazione, per cui eventuali sedimenti sul fondo della bottiglia sono testimoni della naturalità del prodotto. |
