The Company

Il Forno in Canoàra was founded in 2008 as an artisan bakery with a wood oven by the young Fabio Bertolucci.Fabio began his experience as a baker a few years earlier, in 2004 at the age of 22, in an old bakery in the Municipality of Casola. Time passes and Fabio grows and with him the passion and confidence in what was turning from a dream into reality: after so much effort, courage and sacrifice he manages to open his bakery with a wood oven, in Canoàra, a splendid lawn in the village of Regnano.

Marocca of Casola is a precious sign of the mountain cuisine that back. A unique food and unique. It is a small bread, from mixing the two types of flour, chestnut (70%) and wheat (30%) with boiled potatoes.

The ingredients are all from the territory. It is a cultural product very rare and therefore is a Slow Food Presidium.

It is produced in Regnano of Casola in Lunigiana from one manufacturer, a young man who built specially a new furnace: Fabio Bertolucci.
