The olives used to produce Liberace Farm's ORGANIC extra virgin olive oil come from approximately 30 hectares in the northern Brindisi area, fram various cultivars (varieties) with diverse characteristics. They are grown in compliance with organic regulations and eliminate chemical treatments and non-organic fertilizers. The olive harvest begins in early October when the olives reach the perfect level of tipeness (veraison). However, each olive variety has a different ripening period, so harvesting occurs gradually. The next step is the transfomation of the olives into oil, thich takes place within a few hours. The company's mini mill, sized to meet daily needs, is located just a few meters from the fields, so there's no waiting to obtain our organic extra virgin olive oil. The temperature never exceed 27 degrees Celsius, and we vary the machine's parameters based on the type of olive so that each variety can express itself to its fullest potential. Each stage is monitored by the organic certification body, allowing us to guarantee a healthy and safe product for the end consumer.
