In the Fattoria Il Palazzo are bred cattle breed Limousine enrolled in the Herd Book at the Provincial Breeders Association of Florence.
The consistency of our herd of about 200 animals, of which 105 are breeding cows, 5 bulls and the rest of the garments is represented by young males and females of various ages. The breeding makes extensive use of pasture in fact, both the mares is the other animals from life, are placed in pastures in April and will remain here until the following autumn.
During the period of grazing cattle do not receive any kind of supplementation inquanto forage availability of pastures can cover more than adequately the needs of the stessi.I heads for fattening are fed with dry forages (grasses and legumes) and cereal products on the farm organically.
The ration is supplemented with a biological protein feed purchased on mercato.La slaughter and cutting of our cattle is done in compliance with the current regulations and under the supervision of health authorities at local abattoirs where, thanks to the professionalism of the workers are avoided unnecessary suffering to animals, as well as to ensure an efficient separation, in all operating phases, the organic meat from that coming from conventional farms, thus preventing any form of contamination between the two types of production.
The meat thus obtained are packaged directly from the Giordani family at the new company store, in packs of 25kg, 12kg, 6kg using the vacuum technique, which prevents microbiological contamination of the product during handling steps and handling, as well as maintain unchanged the qualitative characteristics.
