WHO WE ARE
Our company
It is located in the hilly part of the southern part of the Sikani Mountains and is influenced by the temperate climate of the Mediterranean Sea, guaranteeing high oil properties. It extends for about 4 hectares (hectares) located in different districts of the Caltabellotta territory (Contrada San Leonardo, Contrada Martusa-Serra d'arancio, Contrada Chimino.) South-west of Sicily.
Traveling through the hilly areas of our farm, fantastic encounters with centuries-old olive trees are made, with twisted and twisted trunks, almost screwed on themselves.
the cultivation of the olive grove area includes 1000 plants essentially represented by the " Biancolilla di Caltabellotta " cultivar which alone covers 90% of the variety cultivated by our company.
This variety produces an extra virgin olive oil DOP and belongs to the olive oil of the " Protected Designation of Origin Val di Mazara ".
The origins
Our Company dates back to 1930, when our ancestors cultivated the "Biancolilla di Caltabellotta" cultivar for personal use.
After the Second World War, since 1946, the company has expanded and enlarged to produce a high quantity of oil for marketing.
To date, the company is composed of the union of several agricultural producers in the family environment which allows the mutual exchange of experience in both cultivation and harvesting.
OUR OIL
The oil of the Sikani Mountains
The extra virgin olive oil of the Biancolilla di Caltabellotta variety has been famous since ancient times for its peculiar organoleptic characteristics and for its particular goodness, due to the variety of the cultivar, the geographical position of the cultivation area and the microclimate. It is obtained from a variety of autochthonous olive, the small and elongated Buscionetta, belonging to the Biancolilla cultivar (precisely called Biancolilla di Caltabellotta ) and which is harvested, strictly by hand, between the end of September and the beginning of October.
The Caltabellotta oil with its Biancolilla variety belongs to the 6 olive oils of the "DOP Val di Mazara" in whose territory Caltabellotta belongs .
Our Olio dei Monti Sikani is a color that can vary from light yellow to intense green, the perfume is elegant and light, the delicate flavor with notes of freshly mown herbs and hints of artichoke and unripe tomato.
It also has a medium fluidity, a fruity flavor with a medium bitter sensation and a slight spicy sensation and the absence of defects.
It is particularly suitable for raw condiments where the use of delicate and decisive oils is required. In seafood appetizers and fish marinades it becomes an irreplaceable ingredient.
Also in the dressing of fatty or smoked fish such as swordfish, salmon and blue fish, it performs an excellent action in enveloping flavors. For the harmony of the fruit and the vigor of taste, it is recommended on meat carpaccio and on green sauces preparations.
Features:
The cultivation system with the orientation of the trees, the distances from each other and their precise location on the ground is the sixth, introduced by the Arabs. Their mathematical order was a sign of civilization against the Christian disorder that randomly placed plants on the field.
Depending on when it is harvested, our oil tastes of artichoke in all its facets . The oil in late September and early October, when the olives are green, tastes of thistle. It is therefore slightly more bitter but, as happens with all the thistles or artichokes, the mouth remains sweet at the end. In November, when the olive is more mature, it starts to be more sweet because it meets the heart of the artichoke.
The spearhead is represented by the almost absolute absence of acidity of the oil . It never exceeds 0.2% . To be extra virgin to be disciplined it takes an acidity from oleic acid below 0.8%. Already 0.5% is considered in most of Italy of the highest quality.
During milling, our oil never exceeds 0.2% over the years and the reason is clear from the position of our land. We are a thousand meters high.
