We conclude direct contracts with farmers, so as to ensure sustainability even by farms that participate in this project; It was created with the latter a stable working relationship for several years to seeking a short chain, which is accomplished with a constant direct contact with those who provide the raw material and the possibility to go in person to the fields to control quality . To this was added the need to produce healthier food with the cultivation of certain varieties of ancient grains starting from the two founders, Rieti and Gentil Rosso and then Abundance, Marzotto and Mec. However, we plan, from next year, to increase the variety of ancient grains. The milling of these grains is performed through the disciplinary agriculture biology, preserving the nutritional characteristics of the grain, using very gentle grinding and slow, both in stone with mills, to preserve its quality.
