The Company
Our products are manufactured strictly in all production stages in order to ensure both compliance with a strict traditional methods handed down for three generations, that compliance with all applicable regulations relating to fishing, processing and preserving fish.
Tuna is processed with the older tradition, is captured near the Sicilian coast (Catch di Sicilia), longline, selective method of fishing and other marine species conservation.
The tuna we worked exclusively on Albacore Tuna, Thunnus Alalunga, has a weight between 8-15 kg, it contains no mercury and other heavy metals in detectable amounts and whose characteristic is the white meat and the extreme digestibility than other tuna quality.
Fishing takes place in two periods of the year, approximately from May to June and October to November.
The product is marketed tuna after a long maturation period of at least 3 or 4 months.
The anchovies are processed within hours of capture (only in Sicily) and come from a traditional fishing with "lampara" and "purse seine net".
The anchovies are fished during the night; in the dark, in fact, they are attracted by strong light (lampara) situated on a small boat that is parked in the middle of the sea; once drawn under the boat, the anchovies are encircled with the network (purse seine) and harvested.
This is a traditional fishing method that follows the lunar phases (with the full moon does not fishing for too much light).
The fish comes fresh and after the organoleptic test, which evaluates the quality, it starts to work. The anchovies are gutted, washed with brine and placed in containers with sea salt from Trapani or Marsala where seasoned from 3 to 6 months. Subsequently, the salted anchovies are mature and start to thread stage, invasettamento, oiling and closing.
All major, evisceration, salting, threading and invasettamento, are performed exclusively by hand.
