Classico Superiore Le uve dell’Anno Uno sono quelle con cui solitamente iniziamo la raccolta in vendemmia e provengono dall’unico vigneto che abbiamo esposto a sud est. È il vigneto più caldo che abbiamo e, volendo con questa etichetta ottenere un vino che abbia struttura e freschezza uniti a buona bevibilità, ci garantisce un buon grado zuccherino nella fase iniziale di raccolta e una soddisfacente maturità fenolica. Le rese di questo vigneto sono le più alte tra le nostre vigne, mediamente si attestano sui 70 massimo 90 ql per ettaro (per dare un termine di paragone il disciplinare della Riserva di Verdicchio Docg prevede 90 ql per ettaro). La raccolta viene fatta manualmente e le uve appena portate in cantina vengono diraspate e poi pressate. La vinificazione avviene con i lieviti spontanei e il vino in tutte le fasi fermentative ed evolutive resta in acciaio.
