La Téa: baita in legno o parzialmente in legno usata per la monticazione estiva, posta sui fianchi della montagna, al confine tra la proprietà privata e i pascoli, talvolta al margine inferiore del bosco… “Dizionario etimologico-etnografico dei dialetti di Livigno e Trepalle” - E.Mambretti, R. Bracchi. Questo formaggio nasce proprio da lì: Latteria di Livigno, con una attenta e precisa scelta al momento della raccolta, nel periodo estivo separa il latte proveniente dalla téa e così come raccolto, cioè con latte crudo intero non scremato, ne produce questo formaggio dal sapore antico, che racconta ancora la tradizione di Livigno e Trepalle. Il colore giallo paglierino, il gusto pieno, il sapore leggermente burroso e l’occhiatura fitta e regolare ne fanno un prodotto unico, realizzato in numero limitato (per l’estate 2014 solo 250 forme) proprio per le sue caratteristiche: latte proveniente da vacche al pascolo che si alimentano esclusivamente con erba fresca di alpeggio.
