La nostra Farina di Castagne La Bastarda è prodotta con metodo tradizionale: le castagne provengono dai castagneti della piccola azienda a Fazzano, da castagneti della valle e dall'alta Toscana L’essicazione avviene in un vecchio essicatoio aziendale (canniccio o metato), al calore di un lieve fuoco di legna di castagno ben stagionata; processo che dura circa 35 giorni. In seguito alla sbucciatura delle castagne, eseguita da una vecchia ma efficiente macchina per la battitura di fronte all’essicatoio, si passa alla accurata cernita per garantire la qualità del prodotto finale Le castagne secche così scelte vengono macinate in un mulino con macine a pietra funzionante ad acqua di Fabbriche di Valico dove il lavoro verrà terminato producendo la farina. Il mulino di Fabbriche di Valico (LU) ha 4 macine per le castagne e una per il mais, quindi la farina di castagne prodotta si può definire senza tracce di glutine.
