Il colore del prodotto finito è il colore naturale della frutta che ha subito un processo di cottura, alla quale non è stato aggiunto alcun ingrediente per mantenere la sua naturalezza. Chiamato comunemente Saba, viene prodotto dalla famiglia Guerzoni, con un procedimento oramai dimenticato, tramite la cottura per almeno tre giorni del mosto d’uva, a fuoco diretto.
L’uso della Saba ha origini molto antiche: i primi ad utilizzarla furono infatti i Romani (sapa è infatti la denominazione latina), come ci testimonia nelle sue ricette Apicio, rinomato cuoco dell’epoca.
La tradizione contadina poi ha tramandato fino a noi la preparazione di questo prodotto, che ricopre un posto di rilievo nei ricettari di tutte le regioni italiane; il suo gusto, molto dolce e saporito, si sposa naturalmente con le ricette della cucina moderna.
Ideale come dolcificante nella preparazione di dolci, gelati e soprattutto yogurt e semifreddi. Si accompagna altresì bene come condimento per verdure cotte formaggi, bolliti.
