La nostra farina di grano tenero è ottenuta mediante una lenta macinazione a pietra del nostro frumento tenero coltivato in regime biologico. Polpa dolce, gustosa, compatta e poco acquosa: sono le caratteristiche principali delle Melanzana a grappolo, dette così proprio perché i suoi frutti si dipanano dallo stesso ramo con una dimensione di 7-10cm. Ciascuna “melanzanina” ha una forma allungata ed è quasi priva di semi. Perfetta da cucinare intera in oliocottura o anche tagliata a dadini e fritta. Le abbiamo raccolte per le nostre conserve nel periodo migliore: non appena hanno raggiunto i 4-5 cm di altezza.
