In this phase of maturation, Parmigiano Reggiano has reached the optimal age to be tasted: it expresses to the nose and the palate a wealth of smells and aromas in perfect balance and harmony.
The flavor evolves into a balance of sweet and savory and the cheese is perfectly soluble, crumbly and grainy. The tyrosine crystals make their presence, testifying to the high degree of proteolysis, which certifies the high degree of digestibility achieved by the product.

Very easy to use, ideal for the preparation of sicilian granita, ice creams, almond milk. Produced exclusively with our sicilian almonds from natural and sustainable agriculture, without the use of chemicals. Store in a cool, dry place. Vegan. Non GMO. HOW TO PREPARE THE SICILIAN GRANITA: Put the almond and pistachio paste and the water in a container (Recommended doses, 500 ml of water for the 200 grams paste or 1250 ml of water for the 500 grams paste), mixed and store in the freezer for 6 hours. Mix from time to time during crystallization. Take the container out of the freezer a few minutes before serving. Advice: You can add sugar, milk or spices to taste (For example cinnamon). HOW TO PREPARE THE ALMOND AND PISTACHIO MILK: Put the almond and pistachio paste and the water in a container (Recommended doses, 500 ml of water for the 200 grams almond paste or 1250 ml of water for the 500 grams paste), blend well until the paste is completely melted. Pour almond and pistachio milk into a bottle and place in the fridge for at least a couple of hours. Keep in the fridge at least 3 days. Shake well before serving. Advice: You can add sugar, milk or spices to taste (For example cinnamon).

Questa pasta, altamente digeribile, viene prodotta utilizzando solo farro triticum dicoccum minuziosamente selezionato e coltivato dai nostri soci sulle colline umbre e marchigiane, con metodo rigorosamente biologico.
Il farro è un cereale antico, ricco di fibre, proteine e principi nutritivi che si ritrovano anche nel prodotto finito grazie all'utilizzo di basse temperature con cui effettuiamo l'essiccazione, che avviene in tempi molto lunghi: circa 12 ore per la pasta lunga e circa 8 ore per la pasta corta.
Con il farro produciamo due gamme di pasta Girolomoni®, una pasta bianca utilizzando 100% farina di farro ed una pasta integrale utilizzando 100% farina integrale di farro.
