The grapes harvested manually are taken to the cellar in the town of Fosdinovo interrara ¾ full of constant temperature. Fermentation with its lees in stainless steel tanks directly and consequent aging for twelve months. Classico Superiore È il fratello maggiore dell’ Anno Uno ed è ottenuto dalle uve del nostro vigneto più vecchio, 45 anni. All’interno di questo vigneto abbiamo individuato una parcella che ha nel suolo una quantità di argilla superiore alla quantità di terreno calcareo che mediamente si riscontra nei suoli degli altri nostri vigneti. La parcella denominata appunto Vigneto di Tobia, dal nome di un ampelologo che intorno al 1850 lavorò nelle nostre zone, è esposta a nord est ed è a circa 200 metri sul livello del mare. E’ vendemmiato in una fase di raccolta solitamente successiva all’Anno Uno per ricercare una maggiore estrazione e per avere un vino con un corpo maggiore pur mantenendo freschezza e bevibilità. La resa del vigneto è mediamente di 50/60 quintali per ettaro, la raccolta viene fatta manualmente. Le uve dopo essere state diraspate e pressate leggermente, sono vinificate in acciaio con lieviti spontanei. Anche l’affinamento avviene in contenitori di acciaio.
