Le nostre mandorle sono prodotte secondo metodi di agricoltura biologica nel territorio di Ruvo di Puglia. La cultivar autoctona coltivata è la Filippo Cea, antica mandorla originaria dell’entroterra murgiano e della quale si conserva ancora la pianta madre in agro di Toritto, derivante dalla Mandorla di Toritto, presidio Slow Food. È famosa per la dolcezza del seme e per le eccelse note aromatiche. È quella più ricercata nella preparazione del latte di mandorla e nei prodotti di alta pasticceria. Tutto parte dai fiori che vengono impollinati dalle nostre api e dalla fecondazione incrociata che le conferisce un sapore superiore. Dopo la fioritura aspettiamo il caldo estivo per raccoglierle tra fine agosto ed inizio settembre. Le facciamo asciugare, come da tradizione, all’aperto grazie alle correnti di aria calda che sono presenti in Puglia. Successivamente le schiacciamo, le selezioniamo ed insacchettiamo per voi.
