Proviene dalla Palestina, dove è conosciuto con il nome di Maftoul, è un prodotto pregiato per la qualità conferita dal metodo di lavorazione tutta artigianale: il frumento spezzettato boulgour viene rotolato nella farina di grano tenero e impastato con acqua e sale, fino a diventare granuloso e poi essiccato al sole per 2/3 giorni. I grani grossi lo rendono ideale nella preparazione di piatti unici con carne, legumi o verdure.
