Legume antichissimo, grazie al suo bassissimo contenuto glicemico (è privo di glutine) e l’elevata presenza di Vitamina C e Ferro, favorisce la depurazione dell’ organismo e l’eliminazione delle tossine. La pianta del lupino, oltre a crescere senza problemi in terreni aridi grazie alle sue radici molto profonde, è un elemento fondamentale nell’ arricchimento di azoto del suolo e nella sua areazione senza utilizzo di mezzi meccanici. Raccolto a mano ed essiccato nel suo bacello al sole di agosto, viene conservato in salamoia per preservarne tutte le caratteristiche. Ottimo sia come aperitivo che come protagonista di zuppe e contorni. I nostri lupini, di una antica varietà salentina, più piccola di quelli comuni, grazie ad una buccia molto sottile, consentono di essere gustati tal quali, senza dover essere sgusciati. Il nome deriva dal greco Lupus, cioè lupo. Si dice infatti che la pianta aggredisca e divori il terreno come un lupo famelico. Questo perché la sua radice, che non conosce ostacoli , è in grado di perforare qualsiasi terreno arrivando a spaccare le rocce. Per questo motivo, anticamente, quando si voleva sbriciolare un terreno sassoso, si piantavano lupini e si attendeva che facessero il loro lavoro.
