Description
Per produrre la Coppa stagionata si utilizzano i fasci muscolari del collo. La salatura a secco si svolge in un unico passaggio massaggiando la carne. Viene poi lasciata a riposo per i successivi 7 giorni.
Una volta che la carne ha assorbito il sale le coppe vengono insaporite con pepe e spezie, insaccate in budello naturale e legate a mano. Vengono poi avviate al processo di asciugatura prima di iniziare la vera e propria stagionatura che durerà circa sei mesi.
Questo prodotto proviene dall'azienda agricola da noi selezionata Agricola Tenca. Questa azienda agricola viene fondata l’11 febbraio 1957 dai fratelli Antonio, Luigi e Enzo Tenca. Rimasta interamente a conduzione famigliare, l’Azienda ancora oggi è gestita dai figli e dai nipoti. L’Azienda ha una lunga esperienza nella produzione di cereali: mais, orzo, frumento e legumi come la soja rigorosamente ogm free che sono alla base dell’alimentazione suina per assicurare un prodotto d’eccellenza. A inizio stagione la famiglia Tenca seleziona le sementi migliori, i Tenca lavorano la terra garantendo il giusto rapporto idrico/nutritivo e utilizzano concime naturale, biologico, per arricchirla riducendo sensibilmente l’utilizzo dei concimi chimici.
L'Agricola Tenca può vantare tracciabilità e genuinità dei suoi prodotti perché coltiva, alleva a ciclo chiuso (dalla nascita alla macellazione) e lavora direttamente e personalmente le carni dei propri suini. Solo così si arriva ad avere i migliori salumi, garanzia di genuinità, gusto, profumo, colore, fragranza, sapidità. E’ per questo motivo che l’Agricola Tenca ha scelto di mettersi in gioco andando controcorrente, non uniformandosi ai salumi che tutti conoscono ma rivalutando i saperi e i sapori di una volta, quelli veri.
