Il 'Gentil Rosso' è una delle varietà antiche diffusa nelle aree del Basso Monferrato più collinari. Si tratta di una delle varietà che reperisco a millimetro zero in quanto il produttore è della Val Borbera, sito in Mongiardino Ligure. Sono molto affezionata a questa varietà che sa 'di casa' nel sapore e nella consistenza, ma soprattutto perchè ricordata con affetto dai vecchi contadini del paese che la coltivavano sino agli anni '50. Essendo un frumento antico può essere assunto in caso di intolleranze non troppo gravi al glutine o in caso di reinserimento controllato del glutine in dieta. Tuttavia gode di alta digeribilità, alto contenuto di proteine solubili e di sali minerali. A questa varietà appartiene un gusto inconfondibile dato proprio dall'apporto genetico varietale e dal territorio di coltivazione assai votato al cereale.
