I testaroli sono una pasta antichissima, cotta nei tradizionali testi di ghisa della cultura contadina della Lunigiana.
Il nostro testarolo biologico di grani antichi nasce dalla semina di cinque varietà di grani antichi, mescolate direttamente in campo secondo una pratica agricola che tutela biodiversità e territorio. È il risultato di una filiera interamente biologica, basata su metodi di coltivazione sostenibili e su una continua ricerca di qualità e autenticità. Ne deriva un prodotto dal gusto intenso e dalla fragranza inconfondibile, capace di esprimere al meglio le caratteristiche originarie del grano.
Il testarolo si presenta come un disco di pasta dorata, che viene successivamente tagliato in piccoli rombi e immerso per circa due minuti in acqua salata portata quasi a ebollizione e poi spenta. Una volta scolato, viene tradizionalmente condito con pesto, oppure con olio extravergine d’oliva e formaggio, ed è subito pronto per essere servito.
Prodotto estremamente versatile, il testarolo, pur essendo a tutti gli effetti una pasta, si presta alla creatività in cucina: dalla carbonara al ragù, dalle preparazioni a base di pesce a quelle di carne. È un ingrediente capace di adattarsi a ogni ricetta, offrendo l’opportunità di riscoprire i piatti della tradizione in una chiave nuova, genuina e contemporanea.
