La prima testimonianza scritta del termine “ caciocavallo” risale al 1350 in una novella del Sacchetti. Il suo nome deriva dalla tecnica di acidificazione della pasta di formaggio, che prevede di legare, il "cacio", "a cavallo" di assi di legno, da qui il nome di "cacio a cavallo". Formaggio a latte vaccino intero, a pasta filata. Confezionato in grosse forme a parallelepipedo. La pasta di colore chiaro è compatta e morbida nel prodotto fresco. Friabile alla masticazione a stagionatura avanzata. L’aroma è delicato e gradevole nei primi mesi. Può essere destinato sia alla tavola, che alla preparazione di cibi. Si consiglia di servire Il Caciocavallo Palermitano fresco a temperatura ambiente, per avere la sicurezza che sprigioni al meglio il suo profumo e, soprattutto, la sua aromaticità.
