Per produrre questa pasta viene utilizzato un grano di grande valore sia nutrizionale che storico, coltivato con metodo biologico.
Graziella Ra® è un frumento proveniente da uno scavo archeologico in Egitto. In Italia è stato portato, verso la fine degli anni Settanta, da un archeologo, che lo consegnò a Paride Allegri, giardiniere comunale a Reggio Emilia in quel periodo. Ivo Totti ne consegnò a sua volta una manciata ai soci di Alce Nero Cooperativa, con un mandato ben preciso: se riuscirete a moltiplicarlo dovete chiamarlo Graziella, il nome della figlia dell'archeologo, morta tragicamente durante la seconda guerra mondiale.
Ma cosa c'entra "RA"? Nell'antico Egitto "RA" è il sole, al quale questa varietà è pure dedicata, essendo l'elemento che ogni giorno ricarica la terra di quella luce e quel calore indispensabili alla nostra vita. Dopo varie traversie siamo riusciti a moltiplicarlo e ad ottenerne le prime produzioni di pasta. E' coltivato dai nostri soci sulle colline del Montefeltro, in provincia di Pesaro e Urbino. E' un frumento a ciclo medio lungo e taglia alta, dotato di una spiga di grandi dimensioni con lunghe ariste. Le rese non superano i 15÷20 q.li ad ettaro.
Da analisi condotte dall'Università di Urbino (Dipartimento di Biotecnologie Alimentari), risulta essere un frumento particolarmente ricco di proteine, di sali minerali e di selenio, un potente antiossidante in grado di contrastare efficacemente i radicali liberi, responsabili di molte patologie umane.
Altra caratteristica importante di questo frumento è che non essendo stato oggetto di miglioramento genetico, si presta meglio degli altri frumenti ad essere introdotto nelle diete delle persone che soffrono di disturbi per intolleranze alimentari. Tuttavia questa varietà, come tutti i frumenti, contiene glutine, quindi non è adatto all'alimentazione dei soggetti affetti da celiachia.
La pasta Girolomoni® prodotta col 100% di semolato Graziella Ra®, è trafilata al bronzo ed essiccata a basse temperature ed in tempi molto lunghi (circa 12 ore per la pasta lunga e circa 8 ore per la pasta corta) al fine di mantenere tutti i principi nutritivi ed organolettici della materia prima anche nel prodotto finito.
