La caponata siciliana è uno mix di sapori e i profumi tutti siciliani.

Dopo aver accuratamente lavato tutte le verdure, le melanzane vengono tagliate a dadi e lasciate per qualche ora a bagno con acqua e sale. Successivamente vengono grigliate, in un'altra pentola viene fatto un soffritto e vengono aggiunti i peperoni tagliati a filetti.
In un altro tegame viene cucinata la salsa con i capperi, olive, mandorle, pinoli e pepe.
Infine vengono aggiunte melenzane e i peperoni e dell'olio extra-vergine di oliva.
