Le mandorle varietà “Sicilia” comprendono una serie di cultivar autoctone del territorio siciliano. In particolare, delle province di Siracusa, Ragusa e Agrigento. Le più conosciute sono le varietà “Tuono” e “Corrente Siciliana”. La mandorla dolce “Tuono”, rispetto alla varietà “Avola”, è meno ricca di olio; il guscio si rompe facilmente e il seme è unico e grosso. La “Corrente Siciliana”, invece, ha una forma più tonda; entrambe si prestano benissimo per la lavorazione dolciaria; ad esempio torroni, biscotti, marzapane, latte di mandorla, gelati, granite, ecc.
