MARRONI
La differenza tra castagne e i marroni va individuata nell’origine del frutto, e quindi nella pianta. La castagna è il frutto di una pianta selvatica cresciuta spontaneamente in natura, i marroni sono il risultato di innesti, incroci e potature, dai primi alberi per rendere i frutti di qualità superiore. La castagna è meno saporita e meno dolce, è ottima bollita o arrostita, viene utilizzata per produrre la farina di castagne. Il marrone è più dolce e croccante, è ideale per tutti i tipi di preparazioni e viene utilizzato moltissimo in pasticceria.
La polpa dolce, gustosa e zuccherina, è adatta a tutte le preparazioni ma è nei dolci che esprime il suo massimo in bontà. Speciali arrostite (caldarroste) abbinate a vini giovani, meglio se si tratta di vino novello. La castagna è un frutto inconsueto, meno ricco di acqua se paragonata agli altri frutti e particolarmente ricca di carboidrati, che la rendono un’alternativa al pane, alla pasta o alle farine. Inoltre, adatta anche a chi soffre di celiachia poiché non contenente glutine.
È importante ricordare che le coltivazioni di castagno non subiscono trattamenti chimici e, quindi, sono a tutti gli effetti completamente naturali.
