La caponata siciliana è uno mix di sapori e i profumi tutti siciliani.Ingredienti:
Pomodoro pelato, Melanzane, Peperoni, Sedano, Cipolla, Olive verdi denocciolate, Capperi, Mandorle, Olio extra vergine di oliva, Pinoli, Uva passa, Olio di girasole, Aceto di vino rosso, Zucchero, Aglio, Pepe, Sale.
Lavorazione:
Dopo aver accuratamente lavato tutte le verdure, le melanzane vengono tagliate a dadi e lasciate per qualche ora a bagno con acqua e sale. Successivamente vengono grigliate, in un'altra pentola viene fatto un soffritto e vengono aggiunti i peperoni tagliati a filetti.
In un altro tegame viene cucinata la salsa con i capperi, olive, mandorle, pinoli e pepe.
Infine vengono aggiunte melenzane e i peperoni e dell'olio extra-vergine di oliva.
