Description
Il farro si suddivide in tre varietà principali (Spelta, Monococcum, e Dicoccum), più altre sotto varietà meno comuni. I primi due sono molto simili al frumento tenero, il terzo molto simile al frumento duro. La particolarità del farro è che trattiene una cuticola aderente al seme anche dopo la raccolta, per questo motivo necessita di un processo di decorticatura prima di essere utilizzato. Questa lavorazione sommata alla bassa produttività, determina un prezzo 3-4 volte maggiore rispetto al frumento comune. La differenza sostanziale tra il farro perlato e quello decorticato e dovuta principalmente alle lavorazioni a cui viene sottoposto. Il farro decorticato subisce solamente la separazione della lolla, la parte corticale esterna priva di particolari pregi nutrizionali, mentre il farro perlato, oltre a quest’ultima lavorazione ne sussegue un’ altra d’abrasione, simile a quella del riso, la quale elimina parzialmente la crusca rendendo il cereale più rapido nella cottura. Il farro è un cereale considerato ad elevato valore biologico, contiene infatti molte vitamine (A, E, C e del gruppo B) nonché sali minerali (Magnesio, Ferro, Calcio) e Zinco. Il magnesio presente in misura elevata, facilita l'utilizzazione dell'insulina e migliora l'attività contrattile dei muscoli, evitando i crampi (molto utile agli sportivi).
