La ricetta tradizionale prevede l'aggiunta di scorzette tagliate a mano alla polpa delle arance. La cottura è lenta e a bassa temperatura in cuocitore a doppia intercapedine per preservare le proprietà e i colori originali dell'arancia. Senza aggiunta di conservanti ne pectina.
