Claretum, conosciuto in tutta l'Europa medievale, è un'antica bevanda a base di vino bianco dolcificata e fortemente speziata. Il Claretum veniva preparato nelle grandi occasioni di festa.
Caratteristiche del vino medievale
Vino bianco, Muller Thurgau D.O.C. Valle d'Aosta dolce, aromatizzato alle spezie, dall'aspetto cristallino e dal colore giallo dorato. All'olfatto si presenta molto intenso e persistente con sentori arancia e di confettura di albicocche. Al sapore è amabile, fresco e morbido, il gusto è avvolgente e molto persistente. Gradazione alcolica: 16% vol
La fonte storica di Claretum
La passione per l'arte culinaria e per la storia ha portato Le Speziali a ricercare e trovare in antichi documenti originali del XV secolo, la ricetta di Claretum vino medievale speziato e ricrearlo per rivivere la storia di quel periodo attraverso il gusto. Infatti Claretum è citato in un documento storico della fine del 1400 appartenente alla famiglia Challant, potente famiglia nobiliare valdostana, che governò gran parte della Valle d'Aosta per conto dei Savoia durante il Medioevo e il Rinascimento. Nel documento, risalente all'epoca di Giorgio di Challant, il Claretum veniva preparato per Canonici regolari della Collegiata di Sant'Orso di Aosta quando egli ne era priore commendatario.
Come si degusta Claretum
Nel medioevo veniva servito a inizio e fine pasto.
Ancora oggi Claretum, servito fresco con un po' di ghiaccio, è ottimo come aperitivo, ma si degusta anche come vino da dessert o da meditazione per accompagnare formaggi erborinati quali gorgonzola, Bleu d'Aoste, Plaisentif, Fontina, Lardo di Arnad DOP, Mocetta, ma anche cioccolato fondente, dolci a base di farina di castagne, Piata o Micòoula (sorta di pandolce valdostano a base di pane integrale, burro, mele, noci e uvetta...).
Può inoltre essere un ingrediente originale per molti cocktail e molti chef hanno cominciato ad utilizzare Claretum nelle loro ricette di cucina.
