Ricco di polifenoli, componenti preziosi per la nostra salute (potenti antiossidanti allunga vita), è fruttato medio/intenso, dal gusto tipico di oliva fresca ed erba appena falciata. Presenta note armoniche e ben equilibrate di piccante e amaro.
PROCEDIMENTO DI PREPARAZIONE BIOLOGICO
Non viene trattato con fertilizzanti chimici e pesticidi, dall’inizio alla fine della lavorazione. L’uso di elementi artificiali altera l’organismo di chi lo ingerisce e può contaminare il territorio. Per questo motivo gli ulivi sono concimati con sostanze organiche, quindi naturali. Questo nettare è sottoposto a un ciclo produttivo che richiama i metodi del passato, quelli che mettevano in campo i nostri nonni. Conferendo quindi all'olio un sapore genuino.
Le olive sono raccolte tra ottobre e gennaio, quando sono giunte al giusto grado di maturazione è allora che il frutto offre le migliori qualità organolettiche permettendo di ottenere oli dal fruttato all’ intenso o medio (secondo le diverse annate).
Le olive sono trasformate in olio entro massimo 48 ore dalla raccolta. La lavorazione delle olive avviene a freddo (ad una temperatura mai superiore a 27°C). Le basse temperature di lavorazione consentono di preservare il gusto, gli odori ed i sapori tipico del frutto.
