Chestnut 400 grIn collaboration with the Sant'Agata farm, the organic honey of Sant'Egle is born.
A small production, as nature creates it, without forcing the bees, without the use of antibiotics and mechanical interventions.
Not microfiltered: Honey is filtered only to retain impurities, leaving the natural particles that compose it in the honey, one of which is pollen;
Non-industrial: although human intervention is required from extraction to potting, our products do not undergo industrial processing processes (such as pasteurization, microfiltration, high-speed pumping, etc.)

Description
Miele Biologico Siciliano di castagno.
Il castagno: si coltiva in zone di media ed alta montagna. Il fiore è un lungo grappolo giallastro.
Fioritura: da giugno a luglio.
Colore: da ambrato a quasi nero.
Stato fisico: cristallizzazione in genere assente o a grossi cristalli.
Odore: forte e penetrante.
Aroma: simile all'odore, pungente all'inizio, poi più o meno fortemente amaro.

Description
Con il Sant’Ansovino vogliamo un vino che unisca corpo e struttura a leggerezza e freschezza.
Raccolta medio tardiva delle uve, fermentazione con i lieviti spontanei e vinificazione separata dei due uvaggi in tini di rovere di Slavonia che poi, dopo la vinificazione e un affinamento separato, vengono uniti nel blend.
Durante la fermentazione viene fatta la follatura manuale delle bucce che favorisce l’estrazione dei tannini e permette una macerazione non troppo lunga. L’intenzione è quella di avere un vino da lungo invecchiamento che mantenga una buona struttura unita ad una certa leggerezza e non eccessiva concentrazione così da evitare una sensazione “troppo carica” al palato.

Alcool: 14% Montepulciano 50%, Cabernet Sauvignon 50% lieviti spontanei, follature manuali durante la fermentazione, affinamento in rovere di slavonia

Description
Se il Vigneto di Tobia è il fratello maggiore dell’Anno Uno il Sant’Ansovino è il padre ispiratore che ha unito insieme tradizione e vocazione alla sperimentazione.
È la vecchia guardia che invece di farsi paradigma evolve e dà alla sua discendenza caratteristiche e aspetti d’avanguardia. Anche queste uve provengono dal vigneto più vecchio, ma a differenza del Vigneto di Tobia adottiamo per la potatura di questa parcella il sistema tradizionale del doppio capovolto.
Il doppio capovolto, favorendo uno sviluppo più verso l’alto del tralcio rispetto al guyot semplice, garantisce un’ottimale ventilazione dei grappoli e permette quando possibile una raccolta più avanzata nel tempo senza che l’umidità comprometta l’integrità dei frutti. Per tale motivo solitamente sono le ultime uve di Verdicchio che raccogliamo.
Il Sant’Ansovino è il vino che nel corso degli anni è stato oggetto, soprattutto in cantina, della nostra maggiore libertà di interpretazione.
Ingredients
Alcool: 14% Breve macerazione sulle bucce in vinificazione, nessuna aggiunta di solfiti, nessuna filtrazione. Non avendo solfitato, oltre alla fermentazione alcolica, svolge anche la fermentazione malolattica.

Its flowers are harvested, as tradition has it, at the moment of its maximum balsamicity, on June 24th and placed in organic extra virgin olive oil for 40 days in the sun.
The active ingredient of Hypericum is released in the oil and the same is colored red.
Called, the MIRACULOUS oil, it was used during the Crusades by doctors to heal stab wounds.
Hypericum oil contains flavonoids, tannins and phloroglucinol (hyperforin) and these are the properties:

CONTRAINDICATIONS:
For external use, St. John's wort oil has no particular contraindications, except for a possible hypersensitivity to the active ingredients, first of all hypericin.
The only recommendation concerns the prohibition of exposure to sunlight or artificial sources of ultraviolet radiation immediately after using St. John's wort oil. In fact, this product is highly photosensitizing, that is, it tends to amplify the effects of the sun's rays on the skin, especially in the case of people with fair complexions or with freckles.
Unlike ingested St. John's wort flower, it does not conflict with hormonal treatments.
Sold in dark packs to preserve the active ingredient that would be damaged in contact with light.
