Una denominazione dalla produzione contenuta, con una storia molto lunga: fu il primo metodo classico a essere prodotto in Italia, fin dalla metà dell’Ottocento, nelle “Cattedrali Sotterranee” oggi riconosciute Patrimonio dell’Umanità Unesco.

Collocato a sud ovest, in un terreno calcareo argilloso, é caratterizzato da una resa volutamente bassa ma di grande qualitá. La vinificazione artigianale ed un affinamento per piú di due anni in botti di rovere, e per sei mesi in bottiglia sono gli elementi che rendono questo grande vino unico per struttura e carattere.
