RECIPE CREAM OF PISELLIIngredienti SKINS: 700 g of pea skins - 300 g potatoes - 1 leek - 2 bay leaves - 6 tablespoons extra virgin olive oil - 1 spoon of salt - 800 ml acqua.Sgranate peas and use them for another preparation. Remove the ends of the pea skins and cut into pieces. Peeled and diced potatoes. Slice the leek .. As you bring to a boil 800 ml of water with salt, sauté the leeks with 4 tablespoons oil and 2 bay leaves. Add potatoes and peas skins. Add water and boil for half an hour. Spend all the food mill or, if you prefer, first whisk and then go. Bring to a boil, making withdraw, if necessary. Finally you can add two more tablespoons of oil or a tablespoon of potato starch and a tablespoon of butter, you'll make it simmer for 5 minutes. This will transform the cream in a velvety.
