Chiamato comunemente Saba, viene prodotto dalla famiglia Guerzoni, con un procedimento oramai dimenticato, tramite la cottura per almeno tre giorni del mosto d’uva, a fuoco diretto.
L’uso della Saba ha origini molto antiche: i primi ad utilizzarla furono infatti i Romani (sapa è infatti la denominazione latina), come ci testimonia nelle sue ricette Apicio, rinomato cuoco dell’epoca.
La tradizione contadina poi ha tramandato fino a noi la preparazione di questo prodotto, che ricopre un posto di rilievo nei ricettari di tutte le regioni italiane; il suo gusto, molto dolce e saporito, si sposa naturalmente con le ricette della cucina moderna.
