Aceto ottenuto dalla fermentazione di mosto cotto di uve tradizionalie della nostra terra, e dal successivo invecchiamento in batterie (serie) di botti di legni differenti, altrove viene chiamato Aceto Balsamico, ma noi lo chiamiamo Balsamico di Montagna perchè è prodotto nell'incontaminato territorio del Parco Nazionale dell'Appennino Tosco Emiliano, in provincia di Reggio Emilia a Cervarezza Terme.
I nostri aceti sono prodotti naturalmente, solo mosto cotto, botti e tempo nel caldo ambiente dei sottotetti di legno e pietra proprio come una volta.
L'invecchiamento può essere di 4 annate differenti, prodotte tutte nello stesso modo ma estratti della botti in annate differenti.
Invecchiato 7 anni un aceto giovane ma già corposo, ideale su carne, pesce (dopo Cottura), formaggi e verdure
