Nello Scorciato, rosso del Candia, le uve Sangiovese, Merlot, Canaiolo Nero, Ciliegiolo e Vermentino Rosso derivano da 3 vigneti. Sono state vendemmiate alla fine di settembre cercando di raggiungere la maturazione fenolica senza perdere freschezza. La fermentazione, come per le uve bianche, è stata effettuata in botte di cemento senza lieviti selezionati, con la sola aggiunta del nostro “lievito madre”. Per preservare la naturale freschezza e florealità del vino abbiamo evitato che le temperature di fermentazione superassero i 25 gradi. Finita la fermentazione il vino ha svolto naturalmente la fermentazione malolattica nelle botti di cemento e, sempre in cemento, ha affinato sulle sue fecce fini per cinque mesi. Caratteristiche Il vino si apre all’olfatto con brillanti profumi di fiori e frutta rossa, completandosi con sentori di spezie ed erbe aromatiche. Al palato ritroviamo la frutta succosa e quasi croccante, il tannino, benché ancora giovane, ha un graffio nobile, il vino ha un incedere verticale, elegante, profondo.
