It comes from a little factory working between the olive groves in Calabria, along the Ionic cost; the firm belongs to our friend Mario Brogna with whom we have been collaborating for 25 years.The olives are grown and worked strictly following the organic standards and under an in-house quality control system able to monitor each production step, from the beginning to the end. The washing and peeling processes are done by innovative equipments able to maintain whole the olives along the many passages thanks to air fluxes. After being so cleaned and made free from residues the olives are then crushed and put in steel-basins. The olive paste thus obtained is then pumped to a horizontal decanter where it is cold-extracted and separated in three phases: water, olive residues (pomace) and the extra-virgin olive oil that we now offer you, pure, in bottle of 75cl.
