Il nostro olio extra vergine di oliva, proviene da un piccolo stabilimento, a totale conduzione biologica, che lavora in mezzo agli uliveti in Calabria, col quale collaboriamo da 25 anni.
Al proprio interno l'azienda mette a punto un controllo in grado di monitorare tutte le fasi della lavorazione, dall'inizio alla fine. Le olive utilizzate per la produzione dell'olio Girolomoni sono per la gran parte della varietà Grossa di Cassano.
Defogliamento e lavaggio avvengono con macchine di ultima generazione le quali, grazie ad appositi flussi di aria corrente, sono in grado di mantenere intatte le olive durante i vari passaggi. Le olive cosí pulite e senza residui vengono poi frantumate e immesse in apposite vasche d'acciaio. La pasta di olive cosí ottenuta viene di seguito estratta a freddo e separata in tre parti: acqua, sansa e l'ottimo olio extra vergine, che offriamo in bottiglie da 75 cl.
