Il nostro Vermentino classico raccoglie le uve di diversi vigneti, tutti sulle scoscese colline di Candia, colline dalla difficile lavorazione a causa delle forti pendenze, che variano dal 30 al 45%.Il nostro Vermentino, come tutti i nostri vini, è stato vinificato in botti di cemento senza l’aggiunta di lieviti selezionati, ma semplicemente aggiungendo alla massa una parte del nostro “lievito madre”.
La vendemmia è cominciata nella terza decade di settembre, per aspettare la giusta maturazione delle uve senza sacrificarne l’acidità, vera anima dei nostri vini.
La fermentazione spontanea si è sviluppata con un processo costante a temperatura controllata, evitando che la stessa superasse i 18/20 gradi.
Al termine della fermentazione abbiamo tenuto il vino nelle botti di cemento sulle proprie fecce nobili per almeno cinque mesi, durante i quali abbiamo effettuato due battonage a settimana.
Caratteristiche
Il vino si presenta al naso con profumi di frutta, fiori ed erbe aromatiche. Al gusto mostra immediatamente un grande equilibrio, la frutta ritorna al palato succosa e, insieme alla tensione acida, sviluppa una scorrevolezza gustativa che termina con un finale piacevolmente sapido.

Prodotto dal vitigno principe della Sicilia sud orientale, il Note Nere Nero d'avola ha un colore rosso intenso, luminoso. All'olfatto si percepiscono fiori rossi, frutta rossa a bacca piccola, affascinante speziatura. Gusto morbido, rotondo, equilibrato, tannini integrati, buona freschezza. The SATOR DOC is produced by Tintilia grapes alone, with only the free-run juice. Nebbiolo d'Alba DOC. Il nome del vino “Nebbiolo” deriva dagli acini di uva, che sono di colore violaceo scuro internamente ma esternamente grigiastri, poiché ricoperti d’abbondante pruina, impalpabile come la nebbia. C’è anche chi lo fa discendere da “nobile”, come il Croce, talent scout vinicolo del Seicento.
La cantina Produttori Dianesi fornisce un prodotto ottenuto con uve dei soci e si presenta con: un profumo netto, ampio, con leggero sentore di spezie e di legno nuovo. Il sapore da una sensazione gustativa di un vino importante, di buona struttura e ottimo equilibrio tra acidità e tannicità. Di colore rosso rubino, vivace da giovane, quando diventa “riserva”, al terzo anno, tende sempre più al colore granata con riflessi aranciati.
