L’olio di riso Naroli è un pregiato condimento ottenuto dalla spremitura a freddo di germe e pula di riso. Il germe e la pula sono rispettivamente l’embrione e la pellicola interna del chicco di riso, particolarmente ricchi di sostanze nutritive. La spremitura a freddo è un metodo che predilige la qualità a discapito della resa, in quanto il calore facilita la lavorazione, aumenta la resa, ma altera le caratteristiche dell’olio. L’olio mantiene quindi tutta l’essenza del riso, diventando così un alimento di qualità. Le principali virtù nutrizionali dell'olio di riso dipendono dalla elevata concentrazione di Vitamina E e Gamma orizanolo. Il Gamma orizanolo è noto prevalentemente per le sue spiccate attività metaboliche, antiossidanti e antinfiammatorie mentre la Vitamina E svogle una funzione di antiossidante biologico. Pertanto, grazie anche all'abbondante presenza di tocoferoli ed alla ricchezza in acidi grassi monoinsaturi (acido oleico) e polinsaturi (acido linoleico), all'olio di riso vengono conferite proprietà antiossidanti, antinfiammatorie, ipocolesterolemizzanti, ipotrigliceridemizzanti e preventive delle malattie cardiovascolari. L'olio di riso andrebbe preferibilmente utilizzato per condire a crudo, poiché le sue benefiche proprietà vengono perdute con il calore ma, visto l'elevato punto di fumo (250°C contro i 175°C dell’olio di oliva) e la resistenza all'ossidazione, è un olio particolarmente adatto anche alla frittura.
