Per preparare la spezia al meglio e sprigionare tutte le sue caratteristiche aromatiche e coloranti, segui questo procedimento: - La quantità di zafferano da utilizzare in cucina dipende molto dal tuo gusto personale e dalle ricette che vuoi realizzare. Come dose media noi ti raccomandiamo 8-10 stigmi a porzione. - Riponi gli stigmi di zafferano tra due foglietti di carta forno e tostali per qualche secondo utilizzando un mezzo caldo, come ad esempio la base riscaldata di una caffettiera o il ferro da stiro a bassa temperatura. - Sempre con la protezione della carta forno, polverizza lo zafferano con l'aiuto del dorso di un cucchiaio; puoi lasciare qualche stigma intero se gradisci dare una nota più appariscente al tuo piatto. - Trasferisci la polvere ottenuta in un tazzina con poca acqua calda, coprila e lascia in infusione per almeno 30 minuti (alcuni estimatori dello zafferano lo lasciano in infusione un'intera notte!). - Versa il liquido di infusione nella tua pietanza a fine cottura, tenendo conto che lo zafferano non va cotto a lungo.
