Il recupero di questa linea di grano Khorasan (conosciuto come grano turanico) è frutto di un intenso lavoro, a cominciare dal seme. Siamo partiti da una popolazione di linee per arrivare a selezionarne una pura, che abbiamo chiamato Graziella Ra.
Prende il nome da una fanciulla, Graziella Fanti, figlia di colui che ci fece pervenire il primo sacco di grano.
Aveva 17 anni quando venne uccisa dai nazisti: portava un cesto di panni, in cui pensavano nascondesse del cibo destinato ai partigiani. La seconda dedica nel nome di questa pasta è a “RA”, il sole nell’antico Egitto, l’elemento che ogni giorno ricarica la terra di quella luce e quel calore indispensabili alla nostra vita e al grano.
Da analisi condotte dall’Università di Urbino risulta essere un frumento con un buon contenuto proteico, di sali minerali e di selenio, un potente antiossidante.
Da un sacco di 1 kg a fine anni ’70 siamo arrivati a produrne circa 319 tonnellate nel 2024!
