I cucunci biologici vengono raccolti nei nostri terrazzameti di capperi di Contrada Madonna delle Grazia.
Questi appezzamenti ci forniscono materi Prime Certificate Biologiche e precisamente Capperi, Olive, Uva Zibibbo
Si servono con gli aperitivi ottimo nelle insalate e in tante altre ricette in alternativa ai capperi .
consigli per l’uso: Sciacquare in acqua corrente e lascire in acqua per almeno 12 ore ; condire a piacere con olio extravergine d’oliva aggiungendo una spruzzata di limone . Una volta dissalati si conservano in un vasetto con olio extravergine d’oliva in frigorifero.

I cucunci prima di essere essiccati vengono dissalati, lasciandoli in ammollo per 36/48 ore , si essiccano in maniera naturale al sole per 15 giorni circa e poi vengono ridotti in polvere.
