Il nome deriva dal latino “ canistrum “che indica il cesto adoperato per la preparazione del formaggio. E’ preparato con latte vaccino e con caglio in pasta di agnello. Formaggio a pasta dura, di forma cilindrica, crosta sottile e superficie rugosa a causa dei segni lasciati impressi dal canestro; la pasta è di colore giallo paglierino chiaro, che tende a diventare più scuro durante la sua maturazione. Il sapore è piccante e deciso caratteristico dei formaggi stagionati.
