Il Quinto Quarto viene chiamato così per differenziarlo dai quattro quarti principali del bovino: due anteriori (spalle) e due posteriori (cosce) ed è composto dai tagli minori, derivanti dalle frattaglie.
Il Quinto Quarto appartiene da sempre alla tradizione contadina più autentica, incentrata sulla naturale sostenibilità delle sue risorse e, di conseguenza, sull'annullamento di ogni spreco; gli allevatori sanno bene che il bovino non è composto solo da fiorentina, filetto e arrosti magri e hanno saputo da sempre valorizzare con cotture lunghe e preparazioni gustose i tagli meno nobili.

L'Azienda Agricola Facchinetti Eliseo è un'azienda a conduzione familiare situata nelle campagne che circondano Treviglio. Eliseo alleva i suoi bovini nel rispetto delle tradizioni contadine e nel rispetto della natura, occupandosi personalmente di tutte le fasi della produzione: dalla coltivazione dei terreni che garantiscono approvvigionamenti per la sua mandria, all'attenzione all'alimentazione e al benessere animale, all'ingrasso e crescita dei suoi capi.
