La ricotta salata è un prodotto tipicamente estivo ed assolutamente tradizionale. Dopo la produzione, la ricotta viene lasciata asciugare 2-3 giorni; dopodichè viene tolta dalla fuscella, massaggiata con sale fino e lasciata asciugare al sole della Sicilia per circa 60 giorni. No sentiamo il bisogno di descrivere altro, se non quello di provarla subito e grattugiarla sopra una fantastica pasta alla norma...fatta ovviamente con la nostra Salsa di Pomodoro Siccagno e Basilico de "Le Bontà di Villa Dafne".
